Quarantine & Cook: Meal Suggestions

Hey Friends,

Today I'm going to give you some suggestions on what to cook and how to stretch your meals.

Right now we're all living this new quarantine life, and for some people it can be challenging.  

Let's talk food! 
Are you tired of cooking the same meals?

If so, now is the time to get creative!

Depending on the size of your family, you can make meals that can last at least 2 days.

Pasta: It doesn't matter if it's spaghetti, baked ziti, lasagna, etc. These meals can be made in large pans and will last a few days, all you need as sides are salad and garlic bread.

Stews: You could never go wrong with a nice pot of beef/chicken stew, with potatoes, carrots, celery, sweet peppers over some yellow or white rice. 

Tacos: Who doesn't love tacos?! All you need is some ground meat, lettuce, tomato, sour cream, cheese and if you want it to really be hearty add corn or beans.

What about the days you don't feel like cooking? 

You could always go to the supermarket and get a few frozen pizzas and some wings.

During these times, you have to get creative and search for recipes online, you'll definitely find some that you might want to try.

Cheesy Chicken & Pasta

I know I am late putting up this blog..better late than never! Lol

The other night I made a dish called Cheesy Chicken & Pasta, I usually cook my chicken in the oven but I decided to switch it up a little. I did everything on the stove and it came out great!

If you would like to try it, here is everything you would need:

Angel Hair Pasta
Chicken Breast (boneless)
Pasta Sauce
Shredded Cheese
Onion & Garlic Powder
Minced Onion
Sazon con Culantro y Achiote
Chicken Stock or Broth low sodium


How To Prepare:

Boil your pasta until they are aldente, drain your pasta, fill a pot with cold water, add the pasta in the cold water for a few minutes..just to stop the cooking process. (overcooked pasta is a no no) Lol...drain the pasta and set it aside. You can do this before or after your chicken is done.

Wash your chicken, place chicken in a pot (big enough to hold sauce and meat).
Season your chicken with all the dry ingredients above, pour in chicken broth or stock until it covers the chicken. Sprinkle in some minced onion.

Cook on medium heat and cover....make sure to keep sticking your chicken to make sure it's getting nice and tender. Once it's nice and soft and almost falling apart add in your sauce, mix well. If there is any broth left in the pot, that's fine! Once the chicken is drenched in sauce, add your cheese on top, cover the pot and let the heat melt the cheese.
(make sure to turn off your pot when you are adding the cheese)

Dig In!

Get a plate, add some pasta and layer it with chicken & sauce...Enjoy!
This dish goes well with any drink you prefer!
